How to make Pulut Pangang
To make pulut pangang , first rinse glutinous rice and soak in water and drain well soaked the rice for about 5 hours or overnight.Mix coconut milk and salt together.Slowly pour coconut milk onto glutinous rice.Add pandan leaves and steam till cooked.After 30 minutes,check to see if rice is soft enough.Sprinkle a little water over rice.Next fry grated coconut in a dry wok till fragrant and then add pepper and coriander seed powder mix well.Add chopped dried shrimp.Grated coconut,sugar,salt and 150 ML,fry till almost dry.After that rinse banana leaves.Spread one of cooked glutinous rice over the banana leaf follow by filling,then press tight and roll it up to the form cylinder.Use tooth picks to secure the end finally grease open.Place wrapped glutinous rice on the pan and grill over low heat fragrant.
The pulut pangang is one of my favourite local food. I especially enjoy the dried shrimp.
